The real thing — anchovy, garlic, egg yolk and parmesan whisked into a thick, savoury dressing that clings to every cos leaf.
Ingredients
- 4 piece anchovy fillets
- 1 clove garlic
- 1 piece egg yolk
- 1 teaspoon dijon mustard
- 1 piece lemon
- 1 teaspoon worcestershire sauce
- 125 millilitre olive oil
- 30 gram parmesan
- 1/2 teaspoon cracked black pepper
Instructions
- 1Mash the anchovy fillets and garlic together to a rough paste.
- 2Whisk in the egg yolk, dijon, worcestershire sauce and 2 tablespoons of lemon juice.
- 3Pour the olive oil in a very thin, steady stream while whisking constantly — the dressing will thicken and turn pale as it emulsifies.
- 4Finely grate the parmesan and stir it through with the black pepper.
- 5Loosen with a teaspoon of cold water at a time until it pours thickly off the spoon.
- 6This one contains raw egg yolk, so use the freshest egg you can and keep it in the fridge for up to 2 days.
