Proper Caesar Dressing

The real thing — anchovy, garlic, egg yolk and parmesan whisked into a thick, savoury dressing that clings to every cos leaf.

Ingredients

  • 4 piece anchovy fillets
  • 1 clove garlic
  • 1 piece egg yolk
  • 1 teaspoon dijon mustard
  • 1 piece lemon
  • 1 teaspoon worcestershire sauce
  • 125 millilitre olive oil
  • 30 gram parmesan
  • 1/2 teaspoon cracked black pepper

Instructions

  1. 1Mash the anchovy fillets and garlic together to a rough paste.
  2. 2Whisk in the egg yolk, dijon, worcestershire sauce and 2 tablespoons of lemon juice.
  3. 3Pour the olive oil in a very thin, steady stream while whisking constantly — the dressing will thicken and turn pale as it emulsifies.
  4. 4Finely grate the parmesan and stir it through with the black pepper.
  5. 5Loosen with a teaspoon of cold water at a time until it pours thickly off the spoon.
  6. 6This one contains raw egg yolk, so use the freshest egg you can and keep it in the fridge for up to 2 days.
