Weeknight Shakshuka

Eggs poached in a rich, smoky capsicum and tomato sauce, mopped up with crusty bread. One pan, big flavour, dinner in half an hour.
Ingredients
- 6 piece eggs
- 2 tin diced tomatoes
- 1 piece red capsicum
- 1 piece brown onion
- 2 clove garlic
- 2 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 2 tablespoon olive oil
- 1/2 bunch coriander
- 8 slice crusty bread, to serve
Instructions
- 1Dice the onion and capsicum, and crush the garlic.
- 2Heat the oil in a large deep frying pan over medium heat. Cook the onion and capsicum for 6 minutes until soft.
- 3Stir in the garlic, paprika and cumin. Cook for 1 minute until fragrant.
- 4Pour in the tinned tomatoes and a pinch of salt. Simmer for 6 minutes until slightly thickened.
- 5Make 6 small wells in the sauce with a spoon. Crack an egg into each well.
- 6Cover the pan with a lid and cook for 6 minutes, until the whites are set but the yolks are still soft.
- 7Scatter with coriander and serve straight from the pan with bread for dunking.
