Weeknight Shakshuka

Eggs poached in a rich, smoky capsicum and tomato sauce, mopped up with crusty bread. One pan, big flavour, dinner in half an hour.

Ingredients

  • 6 piece eggs
  • 2 tin diced tomatoes
  • 1 piece red capsicum
  • 1 piece brown onion
  • 2 clove garlic
  • 2 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 2 tablespoon olive oil
  • 1/2 bunch coriander
  • 8 slice crusty bread, to serve

Instructions

  1. 1Dice the onion and capsicum, and crush the garlic.
  2. 2Heat the oil in a large deep frying pan over medium heat. Cook the onion and capsicum for 6 minutes until soft.
  3. 3Stir in the garlic, paprika and cumin. Cook for 1 minute until fragrant.
  4. 4Pour in the tinned tomatoes and a pinch of salt. Simmer for 6 minutes until slightly thickened.
  5. 5Make 6 small wells in the sauce with a spoon. Crack an egg into each well.
  6. 6Cover the pan with a lid and cook for 6 minutes, until the whites are set but the yolks are still soft.
  7. 7Scatter with coriander and serve straight from the pan with bread for dunking.
