Slow Cooker Corned Beef with Mustard Sauce

Fall-apart corned silverside cooked gently all day, served the traditional way with creamy mustard sauce and vegetables.
Ingredients
- 1.5 kilogram corned beef silverside
- 1 piece brown onion, quartered
- 2 piece carrot, halved
- 2 piece bay leaves
- 2 tablespoon brown vinegar
- 2 tablespoon brown sugar
- 1 teaspoon black peppercorns
- 40 gram butter
- 2 tablespoon plain flour
- 375 millilitre milk
- 2 tablespoon dijon mustard
- 1 kilogram potatoes, halved
- 1/2 piece green cabbage, cut into wedges
Instructions
- 1Rinse the corned beef under cold water and place it in the slow cooker.
- 2Add the onion, carrot, bay leaves, vinegar, sugar and peppercorns. Cover with cold water.
- 3Cook on LOW for 8 hours until the beef is very tender.
- 4Thirty minutes before serving, boil the potatoes for 15 minutes, adding the cabbage wedges for the final 5 minutes. Drain.
- 5Make the sauce: melt the butter in a small saucepan, stir in the flour for 1 minute, then whisk in the milk until smooth. Simmer for 3 minutes.
- 6Stir the mustard into the sauce and season with salt and pepper.
- 7Lift the beef onto a board and slice it thickly across the grain.
- 8Serve the sliced beef with potatoes and cabbage, with mustard sauce poured over the top.
