Choc Chip Cookie Mix In A Jar

A prettily layered jar that becomes two dozen chewy choc chip cookies with just butter, an egg and vanilla. Makes a lovely last-minute gift.
Ingredients
- 300 gram plain flour
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 150 gram brown sugar
- 100 gram caster sugar
- 200 gram dark chocolate chips
- 40 gram desiccated coconut
Instructions
- 1Whisk the plain flour, bicarbonate of soda and salt together, then tip into the base of a 1 litre jar and press flat.
- 2Add the brown sugar in a layer, then the caster sugar, pressing each one flat with the back of a spoon.
- 3Layer the desiccated coconut over the sugar, then finish with the chocolate chips.
- 4Seal the jar and tie on a label with the date and the to-use directions.
- 5TO USE: tip the whole jar into a bowl and beat in 180 g softened butter, 1 egg and 1 teaspoon vanilla extract. Roll tablespoons of dough, flatten slightly and bake at 180°C for 12 minutes. Makes 24.
- 6Store in an airtight jar in a cool dark cupboard for up to 3 months.
