Rainbow Rice Paper Rolls

Fresh, crunchy rice paper rolls filled with colourful veggies and rice noodles. A fun no-cook lunch you can roll together with the kids.
Ingredients
- 12 piece rice paper sheets
- 100 gram vermicelli rice noodles
- 1 piece carrot, cut into thin sticks
- 1 piece red capsicum, thinly sliced
- 1 piece cucumber, cut into thin sticks
- 1 cup red cabbage, finely shredded
- 1/2 cup mint leaves
- 1/4 cup sweet chilli sauce, for dipping
Instructions
- 1Soak the vermicelli noodles in boiling water for 5 minutes, then drain and cool.
- 2Cut all the vegetables into thin sticks and line them up on a board.
- 3Dip one rice paper sheet in warm water for 10 seconds, until just soft.
- 4Lay the sheet flat and pile a small handful of noodles, veggies and mint in the centre.
- 5Fold in the sides, then roll up firmly from the bottom.
- 6Repeat with the remaining sheets and serve with sweet chilli sauce for dipping.
