Garlic Parmesan Chicken Meatballs

Soft chicken mince meatballs with garlic and parmesan that brown beautifully without a drop of frying oil. Lovely with pasta, in a roll, or straight from the basket.
Ingredients
- 600 gram chicken mince
- 1/2 cup dried breadcrumbs
- 50 gram parmesan
- 3 clove garlic
- 1 piece egg
- 1/2 bunch flat-leaf parsley
- 1 teaspoon salt
- 1 tablespoon olive oil spray
Instructions
- 1Finely chop the parsley and crush the garlic.
- 2Mix the chicken mince, breadcrumbs, grated parmesan, garlic, egg, parsley and salt in a large bowl until just combined.
- 3Roll the mixture into 20 balls, each about the size of a golf ball.
- 4Spray the balls lightly with oil and place 10 in the basket with a gap between each. A 5-6L basket holds about 10, so cook in two batches.
- 5Cook at 180°C for 7 minutes, then shake the basket firmly to roll the meatballs over.
- 6Cook at 180°C for another 7 minutes until golden and firm to the touch.
- 7Repeat with the remaining meatballs and serve hot.
