Shakshuka with Feta and Herbs

Eggs gently poached in a smoky capsicum and tomato sauce, finished with crumbled feta. Serve straight from the pan with crusty bread.
Ingredients
- 2 tablespoon olive oil
- 1 piece brown onion, diced
- 1 piece red capsicum, sliced
- 2 clove garlic, crushed
- 2 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 2 tin diced tomatoes
- 6 piece eggs
- 100 gram feta, crumbled
- 1/4 bunch parsley, chopped
- 8 slice crusty bread, to serve
Instructions
- 1Heat the oil in a large deep frying pan over medium heat and cook the onion and capsicum for 6 minutes until soft.
- 2Add the garlic, paprika and cumin and stir for 1 minute.
- 3Add the tomatoes and simmer for 8 minutes until slightly thickened.
- 4Make six wells in the sauce with a spoon and crack an egg into each well.
- 5Cover and cook for 6 minutes until the egg whites are set but the yolks are still soft.
- 6Scatter with feta and parsley and serve from the pan with crusty bread.
