Sesame and Ginger Dressing

Toasted sesame, fresh ginger and soy — the dressing that turns plain cabbage into something worth eating. Also a very good noodle sauce.

Ingredients

  • 3 tablespoon soy sauce
  • 3 tablespoon rice wine vinegar
  • 2 tablespoon sesame oil
  • 80 millilitre sunflower oil
  • 1 tablespoon ginger
  • 1 clove garlic
  • 1 tablespoon honey
  • 1 tablespoon sesame seeds

Instructions

  1. 1Finely grate the ginger and garlic straight into a screw-top jar.
  2. 2Add the soy sauce, rice wine vinegar and honey, then shake until the honey has dissolved.
  3. 3Pour in the sesame oil and sunflower oil and shake hard for 30 seconds.
  4. 4Toast the sesame seeds in a dry frying pan over medium heat for 2 minutes, shaking often, until golden and fragrant.
  5. 5Tip the seeds into the jar and swirl through.
  6. 6Swap the soy sauce for tamari to make it gluten free. Keeps in the fridge for 1 week.
