Crispy Tofu Fried Rice

Golden pan-fried tofu tossed through savoury vegetable fried rice. A brilliant way to use up day-old rice.
Ingredients
- 450 gram firm tofu, cubed
- 2 tablespoon cornflour
- 2 tablespoon vegetable oil
- 4 cup cooked and cooled jasmine rice
- 1 cup frozen peas and corn
- 1 piece carrot, finely diced
- 2 clove garlic, crushed
- 3 tablespoon soy sauce
- 1 teaspoon sesame oil
- 3 piece spring onion, sliced
Instructions
- 1Pat the tofu cubes dry with paper towel and toss them in the cornflour.
- 2Heat 1 tablespoon of oil in a large wok over high heat and fry the tofu for 6 minutes, turning until golden on all sides.
- 3Move the tofu to a plate.
- 4Add the remaining oil to the wok and stir-fry the carrot, peas, corn and garlic for 3 minutes.
- 5Add the rice and soy sauce and stir-fry for 4 minutes, breaking up any clumps.
- 6Return the tofu to the wok, add the sesame oil and spring onion, toss for 1 minute and serve.
