Barbecued Pineapple with Cinnamon Sugar

Pineapple wedges dusted in cinnamon sugar and grilled until caramelised at the edges. Serve warm with a scoop of ice cream while the barbie cools down.
Ingredients
- 1 piece pineapple
- 2 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 20 gram butter
- 1 cup vanilla ice cream
- 1 piece lime
Instructions
- 1Cut the top and base off the pineapple, then slice away the skin in strips.
- 2Quarter the pineapple lengthways, cut out the hard core, and slice each quarter into 2 cm wedges.
- 3Stir the brown sugar and cinnamon together, then toss the pineapple through it.
- 4Heat the barbecue hotplate to medium and melt the butter across it.
- 5Cook the pineapple for 4 minutes on one side, until the sugar bubbles and turns amber.
- 6Turn and cook for 4 minutes more, until softened and browned at the edges.
- 7Squeeze over the lime and serve warm with ice cream.
