Pineapple wedges dusted in cinnamon sugar and grilled until caramelised at the edges. Serve warm with a scoop of ice cream while the barbie cools down.

Ingredients

  • 1 piece pineapple
  • 2 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 20 gram butter
  • 1 cup vanilla ice cream
  • 1 piece lime

Instructions

  1. 1Cut the top and base off the pineapple, then slice away the skin in strips.
  2. 2Quarter the pineapple lengthways, cut out the hard core, and slice each quarter into 2 cm wedges.
  3. 3Stir the brown sugar and cinnamon together, then toss the pineapple through it.
  4. 4Heat the barbecue hotplate to medium and melt the butter across it.
  5. 5Cook the pineapple for 4 minutes on one side, until the sugar bubbles and turns amber.
  6. 6Turn and cook for 4 minutes more, until softened and browned at the edges.
