No-Bake Lemon Coconut Slice

A zesty, creamy slice made from crushed biscuits, condensed milk and lemon, topped with tangy lemon icing. No oven needed. Needs 2 hours chilling before slicing.
Ingredients
- 250 gram plain sweet biscuits
- 1 cup desiccated coconut
- 395 gram sweetened condensed milk
- 125 gram butter, melted
- 1 tablespoon lemon zest, finely grated
- 1 1/2 cup icing sugar
- 2 tablespoon lemon juice
- 20 gram soft butter, for icing
- 2 tablespoon extra desiccated coconut, to sprinkle
Instructions
- 1Grease and line a 28cm x 18cm slice tin with baking paper.
- 2Crush the biscuits into fine crumbs in a food processor, or bash them in a zip-lock bag with a rolling pin.
- 3Mix the biscuit crumbs, coconut, condensed milk, melted butter and lemon zest in a large bowl until combined.
- 4Press the mixture firmly and evenly into the tin.
- 5Make the icing: stir the icing sugar, lemon juice and soft butter until smooth.
- 6Spread the icing over the slice and sprinkle with the extra coconut.
- 7Refrigerate for 2 hours until firm, then cut into 16 pieces.
