Hidden Veggie Lentil Rolls

Golden pastry rolls with a savoury lentil and vegetable filling that tastes like the classic bakery version. Nobody will guess they are meat-free.

Ingredients

  • 1 tin brown lentils, drained
  • 1 piece carrot, grated
  • 1 piece zucchini, grated and squeezed
  • 1 piece brown onion, finely diced
  • 3/4 cup breadcrumbs
  • 2 tablespoon tomato sauce
  • 1 teaspoon dried mixed herbs
  • 2 piece frozen puff pastry, thawed
  • 1 piece egg, beaten
  • 1 tablespoon olive oil

Instructions

  1. 1Heat the oven to 200°C and line a baking tray with baking paper.
  2. 2Cook the onion in olive oil in a frying pan for 3 minutes, until soft.
  3. 3Mash the lentils roughly in a large bowl with a fork.
  4. 4Add the onion, carrot, zucchini, breadcrumbs, tomato sauce and herbs. Mix well.
  5. 5Cut each pastry sheet in half. Shape a log of filling along the long edge of each half.
  6. 6Roll the pastry over the filling and press the seam to seal. Cut each roll in half.
  7. 7Place seam-side down on the tray and brush with beaten egg.
  8. 8Bake for 25 minutes, until deep golden. Cool before packing into lunchboxes.
