Hidden Veggie Lentil Rolls

Golden pastry rolls with a savoury lentil and vegetable filling that tastes like the classic bakery version. Nobody will guess they are meat-free.
Ingredients
- 1 tin brown lentils, drained
- 1 piece carrot, grated
- 1 piece zucchini, grated and squeezed
- 1 piece brown onion, finely diced
- 3/4 cup breadcrumbs
- 2 tablespoon tomato sauce
- 1 teaspoon dried mixed herbs
- 2 piece frozen puff pastry, thawed
- 1 piece egg, beaten
- 1 tablespoon olive oil
Instructions
- 1Heat the oven to 200°C and line a baking tray with baking paper.
- 2Cook the onion in olive oil in a frying pan for 3 minutes, until soft.
- 3Mash the lentils roughly in a large bowl with a fork.
- 4Add the onion, carrot, zucchini, breadcrumbs, tomato sauce and herbs. Mix well.
- 5Cut each pastry sheet in half. Shape a log of filling along the long edge of each half.
- 6Roll the pastry over the filling and press the seam to seal. Cut each roll in half.
- 7Place seam-side down on the tray and brush with beaten egg.
- 8Bake for 25 minutes, until deep golden. Cool before packing into lunchboxes.
