Old-Fashioned Coconut Ice

Pretty pink and white squares of sweet coconut fudge, made with condensed milk and no cooking at all. A nostalgic fete favourite. Needs 3 hours chilling before slicing.

Ingredients

  • 3 1/4 cup icing sugar, sifted
  • 3 1/2 cup desiccated coconut
  • 395 gram sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 3 drop pink food colouring

Instructions

  1. 1Grease and line a 20cm square cake tin with baking paper.
  2. 2Mix the icing sugar, coconut, condensed milk and vanilla in a large bowl until it forms a stiff, sticky mixture.
  3. 3Press half the mixture firmly into the tin in an even white layer.
  4. 4Knead 3 drops of pink food colouring into the remaining mixture until evenly pink.
  5. 5Press the pink layer evenly over the white layer.
  6. 6Refrigerate for 3 hours until firm, then cut into 24 small squares.
