Old-Fashioned Coconut Ice

Pretty pink and white squares of sweet coconut fudge, made with condensed milk and no cooking at all. A nostalgic fete favourite. Needs 3 hours chilling before slicing.
Ingredients
- 3 1/4 cup icing sugar, sifted
- 3 1/2 cup desiccated coconut
- 395 gram sweetened condensed milk
- 1 teaspoon vanilla extract
- 3 drop pink food colouring
Instructions
- 1Grease and line a 20cm square cake tin with baking paper.
- 2Mix the icing sugar, coconut, condensed milk and vanilla in a large bowl until it forms a stiff, sticky mixture.
- 3Press half the mixture firmly into the tin in an even white layer.
- 4Knead 3 drops of pink food colouring into the remaining mixture until evenly pink.
- 5Press the pink layer evenly over the white layer.
- 6Refrigerate for 3 hours until firm, then cut into 24 small squares.
