Parmesan Zucchini Chips

Zucchini rounds in a parmesan and panko crumb that actually stay crunchy. Serve them hot with a bowl of tomato relish for dunking.
Ingredients
- 3 piece zucchini
- 1 cup panko breadcrumbs
- 40 gram parmesan
- 2 piece eggs
- 1/4 cup plain flour
- 1 teaspoon garlic powder
- 1 tablespoon olive oil spray
- 1/2 teaspoon salt
Instructions
- 1Slice the zucchini into rounds about 1 cm thick.
- 2Mix the panko with the grated parmesan, garlic powder and salt in a shallow bowl.
- 3Dip each round in flour, then beaten egg, then the parmesan crumb.
- 4Spray with oil and arrange one layer of rounds in the basket without overlapping. A 5-6L basket fits about 15 rounds, so cook two batches.
- 5Cook at 190°C for 5 minutes, then turn each round over with tongs.
- 6Cook at 190°C for another 3 minutes until crisp and golden.
- 7Repeat with the second batch and eat while hot.
