Parmesan Zucchini Chips

Zucchini rounds in a parmesan and panko crumb that actually stay crunchy. Serve them hot with a bowl of tomato relish for dunking.

Ingredients

  • 3 piece zucchini
  • 1 cup panko breadcrumbs
  • 40 gram parmesan
  • 2 piece eggs
  • 1/4 cup plain flour
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil spray
  • 1/2 teaspoon salt

Instructions

  1. 1Slice the zucchini into rounds about 1 cm thick.
  2. 2Mix the panko with the grated parmesan, garlic powder and salt in a shallow bowl.
  3. 3Dip each round in flour, then beaten egg, then the parmesan crumb.
  4. 4Spray with oil and arrange one layer of rounds in the basket without overlapping. A 5-6L basket fits about 15 rounds, so cook two batches.
  5. 5Cook at 190°C for 5 minutes, then turn each round over with tongs.
  6. 6Cook at 190°C for another 3 minutes until crisp and golden.
  7. 7Repeat with the second batch and eat while hot.
