Sticky Tofu, Sweet Potato and Broccoli Tray

Sweet potato roasts first, then tofu and broccoli join it under a sticky soy and maple glaze. A hearty vegan tray with genuinely crisp edges.

Ingredients

  • 600 gram firm tofu
  • 800 gram sweet potato
  • 1 piece broccoli
  • 3 tablespoon soy sauce
  • 2 tablespoon maple syrup
  • 1 tablespoon sesame oil
  • 2 tablespoon olive oil
  • 2 clove garlic
  • 1 tablespoon sesame seeds
  • 3 piece spring onion

Instructions

  1. 1Heat the oven to 210°C and cut the sweet potato into 2cm cubes.
  2. 2Toss the sweet potato on a large oven tray with the olive oil and a pinch of salt.
  3. 3Roast alone for 18 minutes, until the cubes are soft in the middle.
  4. 4Pat the tofu dry, cut into 2cm cubes and toss with the soy sauce, maple syrup, sesame oil and crushed garlic.
  5. 5Add the tofu and broccoli florets to the tray and pour over any glaze left in the bowl.
  6. 6Roast for 22 minutes, until the tofu is browned at the corners and the broccoli tips are charred.
  7. 7Scatter with sesame seeds and sliced spring onion.
