Sticky Tofu, Sweet Potato and Broccoli Tray

Sweet potato roasts first, then tofu and broccoli join it under a sticky soy and maple glaze. A hearty vegan tray with genuinely crisp edges.
Ingredients
- 600 gram firm tofu
- 800 gram sweet potato
- 1 piece broccoli
- 3 tablespoon soy sauce
- 2 tablespoon maple syrup
- 1 tablespoon sesame oil
- 2 tablespoon olive oil
- 2 clove garlic
- 1 tablespoon sesame seeds
- 3 piece spring onion
Instructions
- 1Heat the oven to 210°C and cut the sweet potato into 2cm cubes.
- 2Toss the sweet potato on a large oven tray with the olive oil and a pinch of salt.
- 3Roast alone for 18 minutes, until the cubes are soft in the middle.
- 4Pat the tofu dry, cut into 2cm cubes and toss with the soy sauce, maple syrup, sesame oil and crushed garlic.
- 5Add the tofu and broccoli florets to the tray and pour over any glaze left in the bowl.
- 6Roast for 22 minutes, until the tofu is browned at the corners and the broccoli tips are charred.
- 7Scatter with sesame seeds and sliced spring onion.
