Lemon Pepper Barbecued Snapper Fillets

Snapper fillets seasoned simply with cracked pepper and lemon, cooked fast on the hotplate so they stay moist. Ready before the salad is dressed.

Ingredients

  • 4 piece snapper fillets
  • 2 tablespoon olive oil
  • 2 piece lemon
  • 1 teaspoon cracked black pepper
  • 1 teaspoon sea salt
  • 1/2 bunch flat-leaf parsley

Instructions

  1. 1Pat the snapper fillets dry with paper towel on both sides.
  2. 2Rub the fillets with olive oil, then season with the salt and cracked pepper.
  3. 3Heat the barbecue hotplate to medium-high for 5 minutes.
  4. 4Lay the fillets skin side down and cook for 5 minutes without moving them.
  5. 5Flip carefully with a wide spatula and cook for 3 minutes more.
  6. 6Press the thickest part with a fork; the flesh should flake apart and look opaque all the way through.
  7. 7Scatter with chopped parsley and squeeze over the lemon just before serving.
