Lemon Pepper Barbecued Snapper Fillets

Snapper fillets seasoned simply with cracked pepper and lemon, cooked fast on the hotplate so they stay moist. Ready before the salad is dressed.
Ingredients
- 4 piece snapper fillets
- 2 tablespoon olive oil
- 2 piece lemon
- 1 teaspoon cracked black pepper
- 1 teaspoon sea salt
- 1/2 bunch flat-leaf parsley
Instructions
- 1Pat the snapper fillets dry with paper towel on both sides.
- 2Rub the fillets with olive oil, then season with the salt and cracked pepper.
- 3Heat the barbecue hotplate to medium-high for 5 minutes.
- 4Lay the fillets skin side down and cook for 5 minutes without moving them.
- 5Flip carefully with a wide spatula and cook for 3 minutes more.
- 6Press the thickest part with a fork; the flesh should flake apart and look opaque all the way through.
- 7Scatter with chopped parsley and squeeze over the lemon just before serving.
