Italian Herb Dressing

The tangy, herb-flecked dressing from the bottle, made properly with dried herbs and red wine vinegar. Cheap, keeps for a fortnight and beats every shop version.
Ingredients
- 150 millilitre olive oil
- 60 millilitre red wine vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon caster sugar
- 1/2 teaspoon salt
Instructions
- 1Tip the oregano, basil, parsley, garlic powder, onion powder, sugar and salt into a screw-top jar.
- 2Add the red wine vinegar and dijon, then shake for 15 seconds and let the dried herbs soften in the vinegar for 5 minutes.
- 3Pour in the olive oil.
- 4Shake hard for 30 seconds until thickened and flecked green throughout.
- 5Taste and add a pinch more sugar if the vinegar bites too hard.
- 6Keeps in the fridge for 2 weeks and only gets better after the first day.
