Korean-Style Beef Rice Bowls

Sweet and savoury sesame beef mince over rice with quick cucumber and carrot. Big flavour from pantry staples in about 20 minutes.
Ingredients
- 500 gram beef mince
- 1/4 cup soy sauce
- 2 tablespoon brown sugar
- 2 teaspoon sesame oil
- 3 clove garlic
- 2 teaspoon fresh ginger, grated
- 1 piece lebanese cucumber
- 1 piece carrot
- 2 piece spring onion
- 2 teaspoon sesame seeds
- 2 piece microwave long grain rice
Instructions
- 1Mix the soy sauce, brown sugar, sesame oil, crushed garlic and ginger in a small bowl.
- 2Thinly slice the cucumber, coarsely grate the carrot and slice the spring onions.
- 3Heat a large frying pan over high heat. Add the beef mince and cook for 6 minutes, breaking it up, until browned with crispy bits.
- 4Pour the sauce over the beef. Stir for 2 minutes until glossy.
- 5Heat the rice pouches in the microwave following the packet directions.
- 6Divide the rice between four bowls. Top with the beef, cucumber and carrot.
- 7Sprinkle with sesame seeds and spring onion, then serve.
