Golden Oat and Coconut Biscuits

Crunchy, chewy biscuits made with oats, coconut and golden syrup. A pantry-staple bake with that classic caramel flavour.
Ingredients
- 1 cup rolled oats
- 1 cup plain flour
- 3/4 cup desiccated coconut
- 3/4 cup caster sugar
- 125 gram butter
- 2 tablespoon golden syrup
- 1 teaspoon bicarbonate of soda
- 2 tablespoon boiling water
Instructions
- 1Preheat the oven to 160°C and line two baking trays with baking paper.
- 2Mix the oats, flour, coconut and caster sugar in a large bowl.
- 3Melt the butter and golden syrup in a small saucepan over low heat.
- 4Stir the bicarbonate of soda into the boiling water, add to the butter mixture and watch it froth, then pour into the dry ingredients and mix well.
- 5Roll tablespoons of mixture into 20 balls, place on the trays 5cm apart and flatten slightly.
- 6Bake for 15 minutes, until deep golden. Swap the trays halfway.
- 7Cool on the trays for 5 minutes to firm up, then transfer to a wire rack.
