Raspberry Jam Drop Biscuits

Buttery vanilla biscuits with a jewel of raspberry jam pressed into the middle. A tin-filler that never lasts long.

Ingredients

  • 185 gram butter, softened
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla extract
  • 1 piece egg yolk
  • 1 3/4 cup plain flour
  • 1/4 cup cornflour
  • 1/3 cup raspberry jam

Instructions

  1. 1Preheat the oven to 170°C and line two baking trays with baking paper.
  2. 2Beat the butter, caster sugar and vanilla with electric beaters until pale and creamy, then beat in the egg yolk.
  3. 3Stir in the plain flour and cornflour to make a soft dough.
  4. 4Roll teaspoons of dough into 24 balls and place on the trays, leaving 4cm between each.
  5. 5Press a dent into the centre of each ball with your thumb or the end of a wooden spoon.
  6. 6Fill each dent with about 1/2 teaspoon of raspberry jam.
  7. 7Bake for 15 minutes, until lightly golden underneath.
  8. 8Cool on the trays for 10 minutes — the jam is very hot — then move to a wire rack.
