Raspberry Jam Drop Biscuits

Buttery vanilla biscuits with a jewel of raspberry jam pressed into the middle. A tin-filler that never lasts long.
Ingredients
- 185 gram butter, softened
- 1/2 cup caster sugar
- 1 teaspoon vanilla extract
- 1 piece egg yolk
- 1 3/4 cup plain flour
- 1/4 cup cornflour
- 1/3 cup raspberry jam
Instructions
- 1Preheat the oven to 170°C and line two baking trays with baking paper.
- 2Beat the butter, caster sugar and vanilla with electric beaters until pale and creamy, then beat in the egg yolk.
- 3Stir in the plain flour and cornflour to make a soft dough.
- 4Roll teaspoons of dough into 24 balls and place on the trays, leaving 4cm between each.
- 5Press a dent into the centre of each ball with your thumb or the end of a wooden spoon.
- 6Fill each dent with about 1/2 teaspoon of raspberry jam.
- 7Bake for 15 minutes, until lightly golden underneath.
- 8Cool on the trays for 10 minutes — the jam is very hot — then move to a wire rack.
