Honey Mustard Pork With Sweet Potato and Apple

Pork steaks roast over sweet potato and apple wedges in a sharp honey mustard glaze. The apple goes jammy and does the work of a sauce.
Ingredients
- 600 gram pork loin steaks
- 700 gram sweet potato
- 2 piece green apples
- 1 piece red onion
- 2 tablespoon dijon mustard
- 2 tablespoon honey
- 2 tablespoon olive oil
- 1 tablespoon fresh thyme
- 1 bunch broccolini
Instructions
- 1Heat the oven to 200°C and cut the sweet potato into 3cm chunks.
- 2Toss the sweet potato and onion wedges on a large oven tray with the oil and thyme.
- 3Roast alone for 18 minutes, until the sweet potato edges are soft.
- 4Whisk the mustard and honey together and brush it over the pork steaks.
- 5Add the thick apple wedges and broccolini to the tray, then lay the pork on top.
- 6Roast for 22 minutes, until the pork is browned and firm to the touch.
- 7Rest the pork on the tray for 5 minutes, then slice and spoon over the pan juices.
