Honey Mustard Pork With Sweet Potato and Apple

Pork steaks roast over sweet potato and apple wedges in a sharp honey mustard glaze. The apple goes jammy and does the work of a sauce.

Ingredients

  • 600 gram pork loin steaks
  • 700 gram sweet potato
  • 2 piece green apples
  • 1 piece red onion
  • 2 tablespoon dijon mustard
  • 2 tablespoon honey
  • 2 tablespoon olive oil
  • 1 tablespoon fresh thyme
  • 1 bunch broccolini

Instructions

  1. 1Heat the oven to 200°C and cut the sweet potato into 3cm chunks.
  2. 2Toss the sweet potato and onion wedges on a large oven tray with the oil and thyme.
  3. 3Roast alone for 18 minutes, until the sweet potato edges are soft.
  4. 4Whisk the mustard and honey together and brush it over the pork steaks.
  5. 5Add the thick apple wedges and broccolini to the tray, then lay the pork on top.
  6. 6Roast for 22 minutes, until the pork is browned and firm to the touch.
  7. 7Rest the pork on the tray for 5 minutes, then slice and spoon over the pan juices.
