Apple Cider and Maple Vinaigrette

Cider vinegar softened with maple syrup and thyme. An autumn dressing for roast vegetables, shredded cabbage and anything with apple in it.

Ingredients

  • 60 millilitre apple cider vinegar
  • 1 tablespoon maple syrup
  • 2 teaspoon dijon mustard
  • 150 millilitre olive oil
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper

Instructions

  1. 1Strip the thyme leaves off their stalks by running your fingers down them backwards.
  2. 2Put the vinegar, maple syrup, dijon, thyme, salt and pepper in a screw-top jar and shake to dissolve.
  3. 3Add the olive oil and shake hard for 30 seconds until thick and cloudy.
  4. 4Taste and add a little more maple syrup if the vinegar is still sharp on the tongue.
  5. 5Let it sit for 10 minutes so the thyme perfumes the oil.
  6. 6Keeps in the fridge for 2 weeks.
