Apple Cider and Maple Vinaigrette

Cider vinegar softened with maple syrup and thyme. An autumn dressing for roast vegetables, shredded cabbage and anything with apple in it.
Ingredients
- 60 millilitre apple cider vinegar
- 1 tablespoon maple syrup
- 2 teaspoon dijon mustard
- 150 millilitre olive oil
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
Instructions
- 1Strip the thyme leaves off their stalks by running your fingers down them backwards.
- 2Put the vinegar, maple syrup, dijon, thyme, salt and pepper in a screw-top jar and shake to dissolve.
- 3Add the olive oil and shake hard for 30 seconds until thick and cloudy.
- 4Taste and add a little more maple syrup if the vinegar is still sharp on the tongue.
- 5Let it sit for 10 minutes so the thyme perfumes the oil.
- 6Keeps in the fridge for 2 weeks.
