Zesty Herb Tabbouleh

A parsley-packed tabbouleh with burghul, tomato, mint and plenty of lemon. Fresh and lively next to grilled meats or falafel.
Ingredients
- 1/3 cup burghul
- 2 bunch parsley
- 1/2 bunch mint
- 3 piece tomatoes
- 3 piece spring onions
- 1 piece lemon
- 1/4 cup olive oil
- 1/2 teaspoon salt
Instructions
- 1Soak the burghul in cold water for 15 minutes, then drain and squeeze dry.
- 2Finely chop the parsley and mint leaves.
- 3Finely dice the tomatoes and slice the spring onions.
- 4Combine the burghul, herbs, tomato and spring onion in a large bowl.
- 5Add the lemon juice, olive oil and salt, then toss well and serve.
