Slow Cooker Creamy Chicken And Corn Chowder

Tinned creamed corn, chicken and baby potatoes turn into a silky chowder while you get on with your day. A splash of cream at the end is the only extra move.

Ingredients

  • 700 gram chicken thigh fillets
  • 2 tin tinned creamed corn
  • 1 cup frozen corn kernels
  • 1 tin tinned baby potatoes
  • 1 cup frozen diced onion
  • 750 millilitre chicken stock
  • 1 teaspoon garlic powder
  • 200 millilitre thickened cream

Instructions

  1. 1Tip the chicken, creamed corn, frozen corn, drained baby potatoes, frozen onion, stock and garlic powder into the slow cooker.
  2. 2Put the lid on and cook on low for 6 hours.
  3. 3Pull the chicken apart with two forks right in the pot, then pour in the cream.
  4. 4Put the lid back on and leave it on low for 10 more minutes.
  5. 5Keeps in the fridge for 3 days. Freeze in containers for up to 2 months and reheat gently in a saucepan over low heat, stirring often so the cream stays smooth.
