Ham and Veggie Mini Quiches

Little crustless quiches loaded with ham, corn and capsicum, baked in a muffin tin. Brilliant warm or cold, and they freeze well too.
Ingredients
- 6 piece eggs
- 125 millilitre milk
- 100 gram sliced ham, chopped
- 1/2 cup corn kernels, drained
- 1/2 piece red capsicum, finely diced
- 3/4 cup grated tasty cheese
- 2 tablespoon self-raising flour
- 1 pinch salt and pepper
Instructions
- 1Heat the oven to 180°C and grease a 12-hole muffin tin well.
- 2Whisk the eggs, milk, flour, salt and pepper in a large jug.
- 3Divide the ham, corn, capsicum and cheese between the muffin holes.
- 4Pour the egg mixture over the fillings, filling each hole three-quarters full.
- 5Bake for 20 minutes, until puffed and set.
- 6Cool in the tin for 5 minutes, then lift out with a knife. Store in the fridge for up to 3 days.
