Creamy Tahini and Lemon Dressing

Tahini whisked with lemon and cold water until it turns pale and creamy. No dairy at all, and it makes a plate of plain vegetables into a meal.
Ingredients
- 120 gram tahini
- 2 piece lemon
- 1 clove garlic
- 1/2 teaspoon ground cumin
- 1 tablespoon olive oil
- 100 millilitre cold water
- 1/2 teaspoon salt
Instructions
- 1Stir the tahini in its tin first — the oil separates and the paste at the bottom is what you want.
- 2Whisk the tahini in a bowl with the juice of both lemons, the crushed garlic, cumin and salt.
- 3It will seize into a thick paste — keep going, this is meant to happen.
- 4Add the cold water a tablespoon at a time, whisking hard, until it loosens and turns pale and creamy.
- 5Whisk in the olive oil and check the seasoning — tahini needs more salt and lemon than feels right.
- 6Keeps in a jar in the fridge for 1 week. Loosen with more cold water as it thickens.
