Sausage, Onion and Potato Basket Dinner

A whole dinner in one basket: thick sausages, wedges of onion and chunks of potato, all browning together. Weeknight food with one thing to wash up.

Ingredients

  • 8 piece thick beef sausages
  • 700 gram desiree potatoes
  • 2 piece brown onion
  • 2 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. 1Cut the potatoes into 3 cm chunks, leaving the skin on.
  2. 2Cut each onion into six thick wedges through the root.
  3. 3Toss the potato and onion with the oil, rosemary, salt and pepper.
  4. 4Tip the vegetables into the basket and cook at 190°C for 12 minutes. A 5-6L basket is full at this point, so keep the sausages aside for now.
  5. 5Shake the basket, then nestle four sausages on top and cook at 190°C for 8 minutes.
  6. 6Turn the sausages over and cook at 190°C for a final 8 minutes until browned all over.
  7. 7Keep the first batch warm and repeat the sausage step with the remaining four.
