Smoky Lentil Shepherd's Pie

Rich smoky lentils under a golden mashed potato lid. Pure comfort food that happens to be completely plant-based.
Ingredients
- 1 kilogram potatoes, peeled and chopped
- 2 tablespoon olive oil
- 1 piece brown onion, diced
- 2 piece carrot, diced
- 2 clove garlic, crushed
- 2 teaspoon smoked paprika
- 2 tin brown lentils, drained
- 1 tin diced tomatoes
- 250 millilitre vegetable stock
- 2 tablespoon tomato paste
- 1 cup frozen peas
Instructions
- 1Boil the potatoes in salted water for 15 minutes until soft, then drain and mash with 1 tablespoon of olive oil.
- 2Preheat the oven to 200°C.
- 3Heat the remaining oil in a large frying pan and cook the onion and carrot for 6 minutes until softened.
- 4Add the garlic and smoked paprika and stir for 1 minute.
- 5Add the lentils, tomatoes, stock, tomato paste and peas, then simmer for 8 minutes until thickened.
- 6Spoon the lentil mixture into a baking dish and spread the mash evenly on top.
- 7Bake for 20 minutes until the top is golden, then rest for 5 minutes before serving.
