Smoky Lentil Shepherd's Pie

Rich smoky lentils under a golden mashed potato lid. Pure comfort food that happens to be completely plant-based.

Ingredients

  • 1 kilogram potatoes, peeled and chopped
  • 2 tablespoon olive oil
  • 1 piece brown onion, diced
  • 2 piece carrot, diced
  • 2 clove garlic, crushed
  • 2 teaspoon smoked paprika
  • 2 tin brown lentils, drained
  • 1 tin diced tomatoes
  • 250 millilitre vegetable stock
  • 2 tablespoon tomato paste
  • 1 cup frozen peas

Instructions

  1. 1Boil the potatoes in salted water for 15 minutes until soft, then drain and mash with 1 tablespoon of olive oil.
  2. 2Preheat the oven to 200°C.
  3. 3Heat the remaining oil in a large frying pan and cook the onion and carrot for 6 minutes until softened.
  4. 4Add the garlic and smoked paprika and stir for 1 minute.
  5. 5Add the lentils, tomatoes, stock, tomato paste and peas, then simmer for 8 minutes until thickened.
  6. 6Spoon the lentil mixture into a baking dish and spread the mash evenly on top.
  7. 7Bake for 20 minutes until the top is golden, then rest for 5 minutes before serving.
