Beef Taco Rice Bowls

All the flavours of taco night served over fluffy rice, with juicy spiced mince, melty cheese and fresh toppings. No shells to shatter.
Ingredients
- 500 gram beef mince
- 2 tablespoon taco seasoning
- 1 piece brown onion
- 1 tin diced tomatoes
- 1 tin corn kernels
- 2 piece microwave long grain rice
- 1 cup tasty cheese, grated
- 2 cup iceberg lettuce, shredded
- 1 tablespoon olive oil
Instructions
- 1Dice the onion. Drain the corn. Shred the lettuce and set toppings aside.
- 2Heat the oil in a large frying pan over medium-high heat. Cook the onion for 3 minutes until soft.
- 3Add the beef mince. Cook for 5 minutes, breaking it up with a wooden spoon, until browned all over.
- 4Stir in the taco seasoning, diced tomatoes and corn. Simmer for 6 minutes until slightly thickened.
- 5Heat the rice pouches in the microwave following the packet directions.
- 6Divide the rice between four bowls and spoon the beef mixture on top.
- 7Finish each bowl with grated cheese and shredded lettuce.
