Everyday Dijon Vinaigrette

The house vinaigrette worth learning by heart — three parts oil to one part vinegar, held together by dijon. Five minutes and a jar.
Ingredients
- 180 millilitre olive oil
- 60 millilitre red wine vinegar
- 2 teaspoon dijon mustard
- 1 piece shallot
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
Instructions
- 1Finely chop the shallot and put it in a screw-top jar with the vinegar and salt.
- 2Leave it for 5 minutes — the vinegar takes the raw bite out of the shallot.
- 3Add the dijon, honey and pepper, then shake to dissolve.
- 4Pour in the olive oil, screw the lid on tightly and shake hard for 30 seconds until thickened and cloudy.
- 5Taste on a lettuce leaf rather than a spoon — that is how you will actually eat it.
- 6Keeps in the fridge for 2 weeks. It sets solid when cold, so stand it on the bench for 10 minutes and shake again.
