Dump-And-Bake Honey Mustard Pork With Apple

Pork medallions, tinned apple and baby potatoes bake in a sweet mustard sauce. It tastes like a Sunday roast for a Tuesday effort.
Ingredients
- 600 gram pork loin medallions
- 700 gram baby potatoes
- 1 tin tinned pie apple
- 2 tablespoon honey
- 2 tablespoon dijon mustard
- 1 tablespoon wholegrain mustard
- 2 tablespoon olive oil
- 1 teaspoon salt
Instructions
- 1Heat the oven to 190°C and tip the pork, baby potatoes and pie apple into a baking dish.
- 2Spoon over the honey, both mustards, oil and salt, then stir once so everything is coated.
- 3Cover with foil and bake for 35 minutes.
- 4Take the foil off and bake for 15 more minutes so the sauce thickens.
- 5Freezer bag version: put the pork, pie apple, honey, mustards, oil and salt into a zip-lock bag and freeze flat for 3 months, then thaw overnight and add fresh baby potatoes in the dish. Cooked leftovers keep 3 days in the fridge; reheat in the microwave for 3 minutes.
