Dump-And-Bake Honey Mustard Pork With Apple

Pork medallions, tinned apple and baby potatoes bake in a sweet mustard sauce. It tastes like a Sunday roast for a Tuesday effort.

Ingredients

  • 600 gram pork loin medallions
  • 700 gram baby potatoes
  • 1 tin tinned pie apple
  • 2 tablespoon honey
  • 2 tablespoon dijon mustard
  • 1 tablespoon wholegrain mustard
  • 2 tablespoon olive oil
  • 1 teaspoon salt

Instructions

  1. 1Heat the oven to 190°C and tip the pork, baby potatoes and pie apple into a baking dish.
  2. 2Spoon over the honey, both mustards, oil and salt, then stir once so everything is coated.
  3. 3Cover with foil and bake for 35 minutes.
  4. 4Take the foil off and bake for 15 more minutes so the sauce thickens.
  5. 5Freezer bag version: put the pork, pie apple, honey, mustards, oil and salt into a zip-lock bag and freeze flat for 3 months, then thaw overnight and add fresh baby potatoes in the dish. Cooked leftovers keep 3 days in the fridge; reheat in the microwave for 3 minutes.
