Golden roast potatoes with shattering crisp edges and a rosemary scent. The trick is a quick parboil and a rough shake before roasting.
Ingredients
- 1.2 kilogram potatoes
- 1/4 cup olive oil
- 2 tablespoon rosemary
- 3 clove garlic
- 1 teaspoon salt
Instructions
- 1Preheat the oven to 210°C with a large roasting tray inside.
- 2Peel the potatoes and cut them into large chunks.
- 3Boil the potatoes in salted water for 8 minutes, then drain.
- 4Shake the potatoes in the colander to roughen the edges.
- 5Tip the potatoes onto the hot tray, coat with the oil and salt, and spread out in one layer.
- 6Roast for 45 minutes, turning once halfway.
- 7Add the rosemary and whole garlic cloves for the last 10 minutes, then serve hot.
