Crispy Rosemary Roast Potatoes

Golden roast potatoes with shattering crisp edges and a rosemary scent. The trick is a quick parboil and a rough shake before roasting.

Ingredients

  • 1.2 kilogram potatoes
  • 1/4 cup olive oil
  • 2 tablespoon rosemary
  • 3 clove garlic
  • 1 teaspoon salt

Instructions

  1. 1Preheat the oven to 210°C with a large roasting tray inside.
  2. 2Peel the potatoes and cut them into large chunks.
  3. 3Boil the potatoes in salted water for 8 minutes, then drain.
  4. 4Shake the potatoes in the colander to roughen the edges.
  5. 5Tip the potatoes onto the hot tray, coat with the oil and salt, and spread out in one layer.
  6. 6Roast for 45 minutes, turning once halfway.
  7. 7Add the rosemary and whole garlic cloves for the last 10 minutes, then serve hot.
