Golden Caramel Slice

Three glorious layers: a coconut biscuit base, soft golden caramel and a snappy chocolate top. Chill it well and cut with a hot knife for bakery-perfect squares. Needs 2 hours chilling before slicing.
Ingredients
- 1 cup plain flour
- 1/2 cup desiccated coconut
- 1/2 cup brown sugar
- 125 gram butter, melted
- 395 gram sweetened condensed milk
- 2 tablespoon golden syrup
- 60 gram extra butter
- 200 gram dark chocolate, chopped
- 2 teaspoon vegetable oil
Instructions
- 1Preheat the oven to 180°C. Grease and line a 28cm x 18cm slice tin with baking paper, leaving paper overhanging the long sides.
- 2Mix the flour, coconut, brown sugar and melted butter in a bowl, then press firmly into the tin with the back of a spoon.
- 3Bake the base for 12 minutes, until lightly golden.
- 4Stir the condensed milk, golden syrup and extra butter in a saucepan over medium-low heat for 8 minutes, until thick and golden. Stir constantly so it does not catch.
- 5Pour the caramel over the base and bake for a further 12 minutes, until golden at the edges. Cool completely in the tin.
- 6Melt the chocolate and oil in a heatproof bowl over a saucepan of barely simmering water, stirring until smooth.
- 7Spread the chocolate over the cold caramel and refrigerate for at least 2 hours, until set.
- 8Lift the slice out using the paper and cut into squares with a large hot knife, wiping the blade between cuts.
