Lamb Meatballs With Couscous and Roast Capsicum

Spiced lamb meatballs roast with capsicum, then couscous steams in the same tray using the tray juices. Warm, fragrant and ready in under an hour.
Ingredients
- 500 gram lamb mince
- 1 1/2 cup couscous
- 375 millilitre boiling chicken stock
- 2 piece red capsicum
- 1 piece red onion
- 2 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 tablespoon olive oil
- 1/2 cup greek yoghurt
- 1/2 bunch mint
Instructions
- 1Heat the oven to 210°C and mix the lamb mince with the cumin, coriander and a good pinch of salt.
- 2Roll the mince into 16 meatballs and place them in a deep oven tray with the capsicum strips and onion wedges.
- 3Drizzle with the oil and roast for 20 minutes, until the meatballs are browned and the capsicum has softened.
- 4Scatter the dry couscous into the gaps and pour the boiling stock evenly over the tray.
- 5Cover tightly with foil and return to the oven for 8 minutes.
- 6Lift the foil and fluff the couscous with a fork so it soaks up the juices.
- 7Dollop over the yoghurt and scatter with torn mint.
