Smoky Barbecue Dry Rub Jar

A sweet, smoky rub in a jar for chicken, pork and vegetables on the barbecue. Mix it once and every cook-up gets easier.

Ingredients

  • 150 gram brown sugar
  • 4 tablespoon smoked paprika
  • 2 tablespoon garlic powder
  • 2 tablespoon onion powder
  • 2 tablespoon salt
  • 1 tablespoon ground cumin
  • 1 tablespoon mustard powder
  • 2 teaspoon ground black pepper

Instructions

  1. 1Rub the brown sugar between your fingers in a large bowl to break up all the lumps.
  2. 2Add the smoked paprika, garlic powder, onion powder and salt.
  3. 3Add the cumin, mustard powder and black pepper, then whisk until deep red and even.
  4. 4Spoon into a 500 millilitre jar and label with the date.
  5. 5TO USE: rub 2 tablespoons of mix with 1 tablespoon oil over 500 g chicken thighs, pork or vegetables. Rest 20 minutes, then barbecue or bake at 200°C until cooked through. Serves 4.
  6. 6Store in an airtight jar in a cool dark cupboard for up to 9 months.
