Classic Golden Damper

A simple Aussie damper with a crusty golden top and soft middle. Serve warm with butter alongside soup, stew or a barbecue.

  • 3 cup self-raising flour
  • 60 gram butter
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. 1Preheat the oven to 200°C and line a baking tray.
  2. 2Mix the flour, salt and sugar in a large bowl.
  3. 3Rub the cold butter into the flour with your fingertips until it looks like breadcrumbs.
  4. 4Stir in the milk with a butter knife until a shaggy dough forms.
  5. 5Shape the dough into a round loaf on the tray and cut a shallow cross in the top.
  6. 6Bake for 30 minutes until golden and hollow-sounding when tapped underneath.
  7. 7Cool for 10 minutes, then slice and serve warm with butter.
