Chocolate Self-Saucing Pudding

A warm chocolate pudding that makes its own glossy sauce underneath while it bakes. Perfect comfort food for a cold weeknight.
Ingredients
- 1 cup self-raising flour
- 1/2 cup caster sugar
- 2 tablespoon cocoa powder
- 125 millilitre milk
- 60 gram butter, melted
- 1 piece egg
- 3/4 cup brown sugar
- 2 tablespoon extra cocoa powder
- 375 millilitre boiling water
Instructions
- 1Preheat the oven to 180°C and grease a 6-cup (1.5 litre) baking dish.
- 2Sift the self-raising flour, caster sugar and 2 tablespoons of cocoa into a large bowl.
- 3Whisk the milk, melted butter and egg together in a jug.
- 4Pour the milk mixture into the dry ingredients and stir until just combined, then spread the batter into the dish.
- 5Mix the brown sugar and extra cocoa together, then sprinkle evenly over the batter.
- 6Slowly pour the boiling water over the back of a large spoon so it covers the topping. Do not stir.
- 7Bake for 40 minutes, until the top is firm and the sauce is bubbling at the edges.
- 8Stand for 5 minutes, then spoon into bowls and serve warm with cream or ice cream.
