Chocolate Self-Saucing Pudding

A warm chocolate pudding that makes its own glossy sauce underneath while it bakes. Perfect comfort food for a cold weeknight.

Ingredients

  • 1 cup self-raising flour
  • 1/2 cup caster sugar
  • 2 tablespoon cocoa powder
  • 125 millilitre milk
  • 60 gram butter, melted
  • 1 piece egg
  • 3/4 cup brown sugar
  • 2 tablespoon extra cocoa powder
  • 375 millilitre boiling water

Instructions

  1. 1Preheat the oven to 180°C and grease a 6-cup (1.5 litre) baking dish.
  2. 2Sift the self-raising flour, caster sugar and 2 tablespoons of cocoa into a large bowl.
  3. 3Whisk the milk, melted butter and egg together in a jug.
  4. 4Pour the milk mixture into the dry ingredients and stir until just combined, then spread the batter into the dish.
  5. 5Mix the brown sugar and extra cocoa together, then sprinkle evenly over the batter.
  6. 6Slowly pour the boiling water over the back of a large spoon so it covers the topping. Do not stir.
  7. 7Bake for 40 minutes, until the top is firm and the sauce is bubbling at the edges.
  8. 8Stand for 5 minutes, then spoon into bowls and serve warm with cream or ice cream.
