Ricotta Hotcakes with Honey Butter

Pillowy hotcakes with a whipped honey butter that melts into every bite. A proper weekend treat worth getting out of bed for.
Ingredients
- 250 gram ricotta
- 3 piece eggs
- 125 millilitre milk
- 1 cup self-raising flour
- 2 tablespoon caster sugar
- 80 gram butter
- 2 tablespoon honey
- 2 piece banana
Instructions
- 1Beat 60 grams of softened butter with the honey until pale and fluffy, then set aside.
- 2Separate the eggs into two bowls.
- 3Mix the yolks, ricotta, milk, flour and sugar into a thick batter.
- 4Whisk the egg whites to soft peaks, then gently fold them through the batter.
- 5Melt a little of the remaining butter in a frying pan over medium-low heat.
- 6Cook 1/3 cup rounds of batter for 2 to 3 minutes each side until golden and puffed.
- 7Repeat with the remaining batter.
- 8Serve stacked with sliced banana and a generous knob of honey butter.
