Miso and Sesame Dressing

White miso whisked into a savoury, faintly sweet dressing with real depth. Spoon it over roast vegetables, cucumber or a bowl of rice and greens.
Ingredients
- 2 tablespoon white miso paste
- 3 tablespoon rice wine vinegar
- 1 tablespoon mirin
- 1 tablespoon sesame oil
- 60 millilitre sunflower oil
- 2 teaspoon ginger
- 2 tablespoon water
Instructions
- 1Put the miso paste in a small bowl and whisk in the vinegar a tablespoon at a time until it is completely lump free.
- 2Finely grate in the ginger and add the mirin.
- 3Whisk in the sesame oil, then the sunflower oil in a thin stream.
- 4Loosen with the water until it pours easily off a spoon.
- 5Taste before adding any salt — miso is salty enough on its own.
- 6Keeps in a jar in the fridge for up to 10 days.
