Miso and Sesame Dressing

White miso whisked into a savoury, faintly sweet dressing with real depth. Spoon it over roast vegetables, cucumber or a bowl of rice and greens.

Ingredients

  • 2 tablespoon white miso paste
  • 3 tablespoon rice wine vinegar
  • 1 tablespoon mirin
  • 1 tablespoon sesame oil
  • 60 millilitre sunflower oil
  • 2 teaspoon ginger
  • 2 tablespoon water

Instructions

  1. 1Put the miso paste in a small bowl and whisk in the vinegar a tablespoon at a time until it is completely lump free.
  2. 2Finely grate in the ginger and add the mirin.
  3. 3Whisk in the sesame oil, then the sunflower oil in a thin stream.
  4. 4Loosen with the water until it pours easily off a spoon.
  5. 5Taste before adding any salt — miso is salty enough on its own.
  6. 6Keeps in a jar in the fridge for up to 10 days.
