A two-ingredient brittle made from toasted sesame and honey — crisp on the outside, lightly chewy in the middle, and ready in about an hour.
Ingredients
- 1.5 cups sesame seeds
- 1.5 cups Sue Bee's Sea Salt Honey
Instructions
- 1Spread the sesame seeds in a dry pan and toast over medium heat, stirring often, until they smell nutty and turn a shade darker.
- 2In a separate small saucepan, warm the honey gently until it reaches the hard-ball stage (around 260°F / 127°C).
- 3Tip the toasted sesame seeds into the hot honey and stir thoroughly so every seed is coated.
- 4Keep stirring over low heat for two to three minutes so the mix thickens evenly.
- 5Pour the sticky mixture into a parchment-lined tin and press it flat with the back of a spoon.
- 6Pop the tin into the freezer and leave for 45 minutes — long enough for the slab to set firm.
- 7Lift the slab out and slice into bars or shards.
