Greek Baked Beans with Feta

Butter beans slow-baked in a herby tomato sauce, topped with creamy feta and served with crusty bread. Humble ingredients, huge flavour.
Ingredients
- 3 tablespoon olive oil
- 1 piece brown onion, diced
- 3 clove garlic, crushed
- 1 piece carrot, grated
- 2 tin diced tomatoes
- 2 teaspoon dried oregano
- 1 teaspoon honey
- 3 tin butter beans, drained
- 150 gram feta, crumbled
- 1/4 bunch parsley, chopped
- 8 slice crusty bread, to serve
Instructions
- 1Preheat the oven to 180°C.
- 2Heat the oil in an ovenproof pan over medium heat and cook the onion and carrot for 5 minutes until soft.
- 3Add the garlic and oregano and stir for 1 minute.
- 4Add the tomatoes, honey and butter beans and stir gently to combine.
- 5Transfer the pan to the oven and bake uncovered for 30 minutes until the sauce is thick.
- 6Top with feta and parsley and serve with crusty bread.
