Black Bean and Corn Burrito Bowls

Build-your-own bowls with spiced black beans, charred corn, rice and creamy avocado. Everyone assembles their own, which keeps the whole table happy.
Ingredients
- 1 tablespoon olive oil
- 2 tin black beans, drained
- 2 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 tin corn kernels, drained
- 3 cup steamed rice
- 250 gram cherry tomatoes, halved
- 2 piece avocado, sliced
- 1 piece lime, cut into wedges
- 1/2 bunch coriander, roughly chopped
Instructions
- 1Heat the oil in a frying pan over medium heat.
- 2Add the black beans, cumin, paprika and 2 tablespoons of water, then cook for 5 minutes, stirring, until hot.
- 3Move the beans to a bowl and wipe out the pan.
- 4Cook the corn in the dry pan over high heat for 5 minutes until lightly charred.
- 5Divide the rice between four bowls.
- 6Top each bowl with beans, corn, tomatoes and avocado.
- 7Finish with coriander and a squeeze of lime, then serve.
