Hotplate Onion Smash Burgers

Balls of beef mince pressed thin onto a screaming hotplate with shaved onion underneath, so you get lacy crisp edges. Cheese goes on while they are still on the plate.

Ingredients

  • 500 gram beef mince
  • 1 piece brown onion
  • 4 piece burger buns
  • 4 slice cheddar cheese
  • 2 tablespoon tomato sauce
  • 2 tablespoon american mustard
  • 8 slice dill pickles
  • 1 teaspoon sea salt

Instructions

  1. 1Roll the beef mince into 8 loose balls, about 60 grams each, and do not compact them.
  2. 2Slice the onion as thinly as you can and separate the strands.
  3. 3Heat the barbecue hotplate to high for 6 minutes, until a drop of water skitters across it.
  4. 4Put a small pile of onion on the hotplate, sit a mince ball on top, and squash it flat with a spatula for 10 seconds.
  5. 5Season with salt and cook for 3 minutes, until the edges are dark and crisp.
  6. 6Scrape underneath and flip, lay a slice of cheese on each patty, and cook for 2 minutes more until the cheese slumps.
  7. 7Toast the split buns on the hotplate for 1 minute, then build with two patties, sauce, mustard and pickles.
