Skinny sweet potato chips with smoky paprika salt, sweet and savoury in the same bite. A little cornflour is the trick to keeping them crisp.
Ingredients
- 700 gram sweet potato
- 2 teaspoon cornflour
- 2 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon salt
Instructions
- 1Peel the sweet potato and cut it into chips about 1 cm thick.
- 2Toss the chips with the cornflour first, then the olive oil.
- 3Spread half the chips in the basket in a loose single layer. A 5-6L basket takes about 350 g at a time, so cook two batches.
- 4Cook at 190°C for 9 minutes, shaking the basket every 3 minutes.
- 5Repeat with the second batch.
- 6Mix the smoked paprika with the salt and toss it through the hot chips.
