Cheesy Beef Mince and Potato Skillet

Beef mince, potato and corn simmer together into a savoury skillet finished under a lid of melted cheese. It is the comfort of a cottage pie without the oven.

Ingredients

  • 500 gram beef mince
  • 600 gram desiree potatoes
  • 1 piece brown onion
  • 1 piece carrot
  • 1 cup frozen corn
  • 1 tin crushed tomatoes
  • 250 millilitre beef stock
  • 1 teaspoon smoked paprika
  • 1 cup grated tasty cheese
  • 1 tablespoon olive oil

Instructions

  1. 1Cut the potatoes into 1.5cm cubes and grate the carrot.
  2. 2Heat the oil in a large frying pan over high heat and brown the mince with the diced onion for 6 minutes, breaking up any lumps.
  3. 3Stir in the paprika, potatoes, carrot, tomatoes and stock.
  4. 4Cover and simmer over low heat for 18 minutes, until a knife slides through a potato cube easily.
  5. 5Stir in the corn and cook uncovered for 3 minutes, until the sauce thickens around the spoon.
  6. 6Scatter over the cheese, cover and rest off the heat for 3 minutes, until melted.
