Sticky honey soy chicken over fluffy rice with steamed broccoli and carrot. Make a double batch on Sunday for easy weekday lunches.
Ingredients
- 600 gram chicken thigh fillets, diced
- 1 1/2 cup jasmine rice
- 1 piece broccoli, cut into florets
- 1 piece carrot, sliced
- 1/4 cup soy sauce
- 2 tablespoon honey
- 2 clove garlic, crushed
- 1 teaspoon sesame seeds
- 1 tablespoon vegetable oil
Instructions
- 1Cook the rice according to the packet directions and keep warm.
- 2Stir the soy sauce, honey and garlic together in a small bowl.
- 3Steam the broccoli and carrot for 4 minutes, until just tender.
- 4Heat the oil in a large frying pan over high heat and cook the chicken for 6 minutes, until browned.
- 5Pour in the honey soy sauce and simmer for 3 minutes, until the chicken is glossy and cooked through.
- 6Divide the rice, chicken and veggies between 4 bowls or containers. Sprinkle with sesame seeds.
