Honey Soy Chicken Rice Bowls

Sticky honey soy chicken over fluffy rice with steamed broccoli and carrot. Make a double batch on Sunday for easy weekday lunches.

Ingredients

  • 600 gram chicken thigh fillets, diced
  • 1 1/2 cup jasmine rice
  • 1 piece broccoli, cut into florets
  • 1 piece carrot, sliced
  • 1/4 cup soy sauce
  • 2 tablespoon honey
  • 2 clove garlic, crushed
  • 1 teaspoon sesame seeds
  • 1 tablespoon vegetable oil

Instructions

  1. 1Cook the rice according to the packet directions and keep warm.
  2. 2Stir the soy sauce, honey and garlic together in a small bowl.
  3. 3Steam the broccoli and carrot for 4 minutes, until just tender.
  4. 4Heat the oil in a large frying pan over high heat and cook the chicken for 6 minutes, until browned.
  5. 5Pour in the honey soy sauce and simmer for 3 minutes, until the chicken is glossy and cooked through.
  6. 6Divide the rice, chicken and veggies between 4 bowls or containers. Sprinkle with sesame seeds.
