Speedy Lentil Spaghetti

A hearty tomato and lentil sauce over spaghetti that tastes like it simmered all afternoon. Budget-friendly, meat-free and ready in 30.

Ingredients

  • 400 gram spaghetti
  • 2 tin brown lentils
  • 700 millilitre tomato passata
  • 1 piece brown onion
  • 1 piece carrot
  • 3 clove garlic
  • 2 teaspoon dried oregano
  • 2 tablespoon olive oil
  • 1/2 cup parmesan, grated
  • 1 teaspoon salt

Instructions

  1. 1Finely dice the onion, coarsely grate the carrot and crush the garlic. Drain and rinse the lentils.
  2. 2Heat the oil in a large deep frying pan over medium heat. Cook the onion and carrot for 5 minutes until soft.
  3. 3Add the garlic and oregano and stir for 1 minute.
  4. 4Add the lentils, passata, salt and half a cup of water. Simmer for 12 minutes, stirring now and then.
  5. 5While the sauce simmers, cook the spaghetti in salted boiling water for the time on the packet, then drain.
  6. 6Toss the spaghetti through the sauce.
  7. 7Serve topped with grated parmesan.
