Speedy Lentil Spaghetti

A hearty tomato and lentil sauce over spaghetti that tastes like it simmered all afternoon. Budget-friendly, meat-free and ready in 30.
Ingredients
- 400 gram spaghetti
- 2 tin brown lentils
- 700 millilitre tomato passata
- 1 piece brown onion
- 1 piece carrot
- 3 clove garlic
- 2 teaspoon dried oregano
- 2 tablespoon olive oil
- 1/2 cup parmesan, grated
- 1 teaspoon salt
Instructions
- 1Finely dice the onion, coarsely grate the carrot and crush the garlic. Drain and rinse the lentils.
- 2Heat the oil in a large deep frying pan over medium heat. Cook the onion and carrot for 5 minutes until soft.
- 3Add the garlic and oregano and stir for 1 minute.
- 4Add the lentils, passata, salt and half a cup of water. Simmer for 12 minutes, stirring now and then.
- 5While the sauce simmers, cook the spaghetti in salted boiling water for the time on the packet, then drain.
- 6Toss the spaghetti through the sauce.
- 7Serve topped with grated parmesan.
