Barbecued Corn with Chilli Lime Butter

Sweet corn cobs blistered on the grill bars and rolled in a soft butter spiked with lime and a little chilli. Messy and worth it.
Ingredients
- 4 piece corn cobs
- 60 gram butter
- 1 piece lime
- 1/2 teaspoon chilli powder
- 1/2 bunch coriander
- 1 pinch sea salt
Instructions
- 1Pull the husks and silks off the corn cobs and snap off the stalks.
- 2Mash the softened butter in a bowl with the chilli powder, lime zest, salt and 1 tablespoon of lime juice.
- 3Heat the barbecue grill bars to medium for 5 minutes.
- 4Sit the cobs on the bars and cook for 12 minutes, rolling them a quarter turn every 3 minutes.
- 5Check the kernels are bright yellow and blistered brown in patches, then lift onto a platter.
- 6Smear the chilli lime butter over the hot cobs and scatter with chopped coriander.
