Frozen Berry Yoghurt Bark

Creamy yoghurt frozen into a snappy bark studded with berries and granola. Break off shards for a cooling after-school treat. Needs 4 hours in the freezer before serving.

Ingredients

  • 2 cup greek yoghurt
  • 2 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup mixed frozen berries
  • 1/2 cup nut-free granola

Instructions

  1. 1Line a baking tray with baking paper.
  2. 2Stir the yoghurt, honey and vanilla together in a bowl.
  3. 3Spread the yoghurt over the tray in a layer about 1cm thick.
  4. 4Scatter the berries and granola over the top, pressing them in lightly.
  5. 5Freeze for at least 4 hours, until solid.
  6. 6Break into shards and eat straight from the freezer. Store frozen for up to a month.
