Lamb Kofta Skewers With Yoghurt Sauce

Spiced lamb mince pressed onto skewers and cooked until browned outside and tender within. The cool minty yoghurt is the perfect partner. Needs 20 minutes chilling before cooking.
Ingredients
- 600 gram lamb mince
- 1/2 piece brown onion
- 2 clove garlic
- 2 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 cup greek yoghurt
- 1/2 bunch mint
- 1 piece lemon
Instructions
- 1Grate the onion and crush the garlic into a large bowl.
- 2Add the lamb mince, cumin, ground coriander and salt, and mix with your hands until sticky.
- 3Press the mixture into eight sausage shapes around short metal skewers, then chill for 20 minutes.
- 4Lay four skewers in the basket without touching. A 5-6L basket fits four short skewers, so cook two batches.
- 5Cook at 190°C for 7 minutes, then turn each skewer over with tongs.
- 6Cook at 190°C for another 7 minutes until browned and firm, then repeat with the second batch.
- 7Chop the mint and stir it into the yoghurt with a squeeze of lemon to serve.
